Chocolate Chip Cookies-in-a-Jar and Recipe (vegan freindly)

A good chocolate chip cookie has to be one of the best simple pleasures in life. I love gifting these easy-to-make cookies in a jar that people can bake easily on their own time and enjoy fresh. This recipe by Sweet Simple Vegan makes the most delicious chocolate cookies that our vegan friends can enjoy too. Plus, the best part? You can indulge in the raw cookie dough completely worry-free! So below I share her vegan recipe plus a non vegan option equally delicious. 

Part 1 - Cookie Ingredients

The jar will only include the dry ingredients. Instructions for adding the wet ingredients will be included for when it’s time to bake.
 
Wet ingredients
Vegan:
  • 1/2 cup oil coconut oil melted 
  • ½ cup unsweetened apple sauce
  • 1.5 teaspoons vanilla extract

OR

Non-vegan option

  • 1 cup melted butter or coconut oil
  • 2 eggs
  • 1.5 teaspoons vanilla extract
Dry Ingredients
  • ¾ cup granulated sugar
  • ¾ cup packed brown sugar
  • 2 ¼ all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup vegan chocolate chips or chocolate chips
 

Part 2 – Assembling the Cookie Jar

You’ll Need:

  • 32 oz Mason jar (standard size)
  • Ribbon and labels/tags for gifting (easily found at the Dollar Store)
  • Mixing bowl
  • Measuring cups & spoons
  • Funnel (to make pouring easier and avoid mess)

Instructions:

  1. In a mixing bowl, combine the flour, salt, baking powder, and baking soda.
  2. Using a funnel, pour the flour mixture into the jar, pressing down to flatten it as much as possible.
  3. Add the brown sugar, pressing it down to level.
  4. Add the granulated sugar and flatten it down as well.
  5. Top with the vegan chocolate chips, which will fill the jar to the very top.
  6. Secure the lid and decorate the jar with ribbon in a style you like.  My mother taught me how to curl my ribbons with a knife and this always looks nice! I recommend finding a Youtube video (it's quite simple, but I would hate for you to hurt yourself over curling Ribbon)
  7. Label the jar with baking instructions or simply direct the recipient to this page for more detailed guidance.  If you're blessed with great handwriting then writing your labels will be cute and personal. These labels are Avery.

Non-Vegan:

On the label, write: "Add to mixture: ½ cup unsweetened applesauce, 1.5 tsp vanilla extract, and 1/2 cup melted coconut oil. Mix with the dry ingredients and bake at 350˚F for 13-14 minutes."

Vegan:

On the label, write: "Add to mixture: 2 large eggs, 1 cup melted butter or coconut oil, and 1.5 tsp vanilla extract. Mix with the dry ingredients and bake at 350˚F for 13-14 minutes."

 

Part 3 - Baking the Cookies from the Jar

This recipe yields 3 dozen cookies. You can either bake them all at once or refrigerate the dough—If the dough is vegan, it will stay fresh for up to two weeks longer than traditional dough.
 

You’ll Need:

Vegan option:

  • 1/2 cup oil coconut oil melted 
  • ½ cup unsweetened apple sauce
  • 1.5 teaspoons vanilla extract

OR

Non-vegan:

  • 1 cup melted butter or coconut oil
  • 2 eggs
  • 1.5 teaspoons vanilla extract

    +

    • Mixing bowl
    • Electric mixer (optional)
    • Baking sheet & parchment paper
     

    Instructions:

    1. Preheat your oven to 350˚F and line a baking sheet with parchment paper.
    2. Before dumping the contents of the jar into the mixing bowl, remove most of the chocolate chips from the top and set them aside.
    3. Empty the remaining jar ingredients into the bowl and stir.
    4. Add the applesauce, melted coconut oil, and vanilla extract. Use an electric mixer to combine, or mix by hand until everything is thoroughly incorporated.
    5. Using clean hands, mix the reserved chocolate chips into the dough. The dough might seem dry, but keep working it with your hands until it's evenly mixed.
    6. Scoop the dough into tablespoon-sized balls and place them on the baking sheet, about 2 inches apart.
    7. Bake for 13-14 minutes, then let the cookies rest on the sheet for 1 minute after removing them from the oven.
    8. Enjoy!
